Football and Pot Roast

Fall is here, those cool crisp nights, sweat shirts, football and slow cooked meals. Tonight it was pot roast, not your ordinary post roast. This is an old Lithuanian meal with a twist. It is absolutely delicious!! I had to make some changes to meet the gluten free requirements.
4 or 5 lb post roast
2 onions sliced thin
3 carrots cut into chunks
2 cloves garlic minced
I 14.5 oz can of tomatoes ( in place of ketchup)
2 tsp horseradish
1/4 cup apple cider vinegar
1 cup broth or water
sear the pot roast on all sides, add onions carrots and garlic, sweat them out a bit then add the tomatoes, broth, vinegar and horseradish cover and simmer for about 4 hours until the meat is tender. Enjoy over rice or alone with a side of salad and enjoy the game. Slow cooked meals always make the house smell good and welcoming, you will be sure to get the kids to come running for dinner. Spend time with one another talk about your day, and enjoy a warm slow cooked meal.
