Paleo Day 26

The soup is on, I love taking the time to make a nice soup for dinner, being one of my son has the whooping Cough. Yes you read that right Whooping Cough. Crazy it is so I decided to make a big pot of soup for dinner and the next couple of days. I call it the healing soup. What is healing soup? Chicken soup with lemon ginger and some chili pepper flakes. Just what the Dr ordered. I added mahogany rice with it, it’s a complex carb , 4 grams protein, 33 grams of carbs, selenium, potassium, magnesium and phosphorus, It is also a good source of the antioxidants called flavonoids, that protect your cells from being damaged by free radicals. The darker the rice more flavonoids. How to make some healing soup, 2 large white onions, 3 cloves of garlic, about 2 inches of fresh ginger, 3 stalks of celery, 2 tbls lemon zest, the juice of two lemons 2 chicken breast with bones in. (bones give the soup the flavor) saute all of the the onions, celery, garlic, ginger, 2 tsp chili flakes add the chicken lemon zest 4 cups of chicken stock( I normally make it myself but if you are in a rush get the unsalted stock in a box that way you can control the sodium) add lemon juice and cilantro let simmer for at least 2 hours and rice and enjoy. It was so good!! Hoping my son feels better soon.
My menu was great today, eggs and spinach, snack watermelon, tomato and cucumber salad for lunch, feel better soup for dinner, 8 glasses of water.
When a family member or neighbor gets sick take a moment to make a pot of soup and take it over to them not only will the soup make them feel better but; to know you thought enough of them to take the time to make them soup it will make their day!! So take the time and make the soup for someone not only will they benefit from it you and you will end up with a happy heart! Heading up to bed, sleep tight my friends!!
