What a beautiful dish! In a traditional French Nicoise there is normally Tuna, potatoes and green beans. I changed it up some, I have eliminated the Tuna and potatoes not that I don’t like it that way; I just didn’t have any on hand so I added avocado, cannellini beans and black olives with a Lemon Dijon dressing! That is the beauty of cooking if you don’t have it all you can improvise and make it your own. Love this so clean and fresh. Make this as a side or as a meal.
1 avocado, blanch 1 lb of green beans, 1 tomato sliced in wedges, a palm full of capers, fresh baby spinach as the bed, 1 can of drained and rinsed cannellini beans, and a hand full of black olives, 2 hard-boiled eggs sliced in half, dressing juice of one lemon, 1 tsp of Dijon mustard, grated fresh garlic, a handful of fresh parsley chopped, a pinch of kosher salt, ground black pepper to taste, drizzle in while whisking 1/2 cup of olive oil. then spoon the dressing over the plate.
