How can you benefit from eating Black Rice?

2011 goodness I was hoping it would be a better year for most,  recently I have heard of too many falling ill from that nasty disease Cancer.  Yes from children to Seniors in being a Private Chef specializing in Gluten Free and dietary needs most of my clients are usually newly diagnosed with some form of food allergy (Gluten-Free)or disease be it heart, sugar or yes  Cancer, when they invite me into their homes to cook for they want me to help them stay healthy through treatment or get them back on their feet again. I am always looking for foods that will not only sustain them it also has to be packed with tons of minerals, iron, high fiber, vitamins  and tons of other great nutritional benefits. So I guess you can say I am always looking for the next super food, well I believe I have found it and I love it!!  I add it to soups or make it as a side or toss it with some roasted veggies you can even add to your favorite  garden salad to add texture a nutty flavor and beautiful color.  So what is this super food that I am feeding to my clients it is Black Rice.  It can be hard to find in your local grocery store but health food stores or specialty stores carry it.  It is a bit pricier then a bag of brown rice but it is packed with so many minerals, Iron and has a ton of  other health benefits so to me the benefits out way the price.   What is Black Rice you ask? It is an heirloom rice cultivated in Asia, that was grown primarily for  Emperors.  Come on now aren’t you worthy of eating like an Emperor?  Yes you are!!  Not only is this  fabulous rice  good for you it has a wonderful sweet nutty flavor and looks great on a plate. We eat with our eyes first don’t we?  So it is always nice to have something pretty on our plate that tastes yummy especially when we don’t feel so well. 🙂

Though it is dark in color raw when it cooks it becomes a beautiful purple, this color comes from the  flavonoids known as anthocyanins same pigments  that are found in dark cherries, blackberries and raspberries we all know the benefits of dark berries and their role in preventing a variety of chronic diseases like cancer, diabetes, heart disease, Alzheimer’s and auto immune diseases that stem from their antioxidants and anti inflammatory properties.

The National Journal of Nutrition in 2008 showed that black rice extract helped prevent plaque build up in the arteries of the heart, it also lowered lipid components including triglycerides. In fact the black rice extract was found to be as powerful as the prescription Simvastatin, a drug used to lower cholesterol levels, this affects arises from the anthocyanins that are so abundant in black rice.  WOW is all I can say!  If you can get out and get yourself a bag you will love it too!!  It runs about $6 to $7 per 15 oz bag.
