” Why haven’t I lost weight since I have become gluten-free?” This question has been asked of me more often than not lately. When talking with my client I can see the frustration in their eyes. Gluten-free doesn’t mean low-calorie it means it is free of protein of wheat, rye and barley. I think with Gluten-Free being the new big thing in the diet world people get the wrong impression of why or who it is good for. Yes you can lose weight by eating a gluten-free diet when you exchange the higher carb breads, crackers and snacks with the higher protein based flours as in nut flours, flax and or quinoa. Quinoa is a seed of a leafy plant, very high in essential amino acids, iron, and vitamins, it has been hailed as the best protein source in the plant world. It can be used in soups, salads, flakes (ie oats) or ground into a flour. Wondering what it tastes like? It has a light nutty taste similar to Barley. Incorporating this along with legumes and leafy greens into your diet you will see a huge change in the way you feel and the weight will start to come off. Best results with every weight loss regimen eat several small meals throughout the day and exercise. Menu planing is huge it keeps you on task. This is a great diet for those who are Celiac / Diabetics. So menu plan, keep away from the white flours, bump up the proteins and read your labels you never know where Gluten will show up wheat is in a lot of products you will be surprised.
